Bikini

Yields 10 people

For the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Drink (yields 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Cordial: Put the listed components in a saucepan, heat until it reaches a light boil, mixing so the sugar melts. After that, remove from the heat allowing it to cool down fully. Decant to a clean bottle, seal and store in the refrigerator, it will last for about four weeks.

For the Batch Mix: Combine the specified liquid ingredients into a large bottle, leave to sit for 60 minutes, then strain , ideally through cheesecloth, to ensure it's fully clarified.

To serve: Measure 85ml of the cocktail base into your cocktail shaker containing ice, gently stirring carefully for one minute to chill. Pour into a chilled martini glass or similar, garnish with some cranberries and finish by giving it a quick spritz of the essential oil over the top.
